
Jaggery is the famous item in Andhra pradesh. This jaggery is a traditional unrefined sugar consumed in Asia ,Africa and south America. This type of sugar is made from product of sugarcane juice without separation of the crystals and changes to golden brown to dark brown in colour.This Jaggery contains up to 50% of Sucrose, upto 20% of sugar syrup, upto 20% of moisture content,and other insoluble matter such as ash,proteins,and bagasse fibers (part remianing after sugarcane).

The word jaggery is use for the products of both sugarcane and the palm tree. All types of the sugar come in blocks or pastes and make the sugar syrup heated to 200 degree C . This syrup is made by boiling sugarcane juice in a large round bottom vessel .

Jaggery is specially used during Makar Sankranti for making sweets. The festivals will be incomplete without using jaggery .In Maharashtra many the people give water which is mixed with piece of jaggery when someone arrives home from working under a hot sun. jaggery contains many minerals not found in ordinary sugar and is considered beneficial to health by the tradional medical system Ayurveda. .

Many of the people add a pinch of jaggery to sambar ,rasam and in other dishes also. Largest Jaggery market in India followed by Anakapalli of the Visakhapatnam District in Andhra pradesh. Jaggery is considered as a sweet and is eaten by children and adults likely and also they mix in the green tea and take in the afternoon which is good for health.Jaggery is a rich source of iron due to the process involved using iron utensils.The Great Gandhi felt that jaggery was healthier than sugar as it was not introduced into the blood as rapidly. As such ,he used it in his own personal diet .
